Quick Healthy Recipes – Lemon Pepper Shrimp Scampi

1 cup uncooked orzo

2 tablespoons fresh lemon juice

Preparation
1. Cook orzo in accordance with package instructions, not including salt and fat. Drain. Put orzo inside of a medium bowl. Stir in parsley as well as 1/4 teaspoon salt; cover and keep warm.
2. While orzo cooks, melt 1 tablespoon butter inside a large nonstick fry pan on medium-high heat. Sprinkle shrimp using leftover 1/4 teaspoon salt.
